Ingredients
4 salmon fillets, 6 oz each, skin-on or skinless
2 tablespoon olive oil, for searing
salt, to taste
black pepper, freshly ground, to taste
1 teaspoon paprika, optional, for color
4 garlic cloves, minced
4 tablespoon unsalted butter
1/3 cup lemon juice, fresh squeezed
1 tablespoon lemon zest, from about 2 lemons
2 tablespoon parsley, chopped
1/4 teaspoon red pepper flakes, optional, for a hint of heat
Instructions
Pat salmon dry and season both sides with salt, pepper, and paprika.
Heat olive oil in a large skillet over medium-high heat and sear salmon until golden.
Flip salmon and cook until just done.
Remove salmon from skillet and tent with foil to keep warm.
Melt butter in the same skillet, then sauté minced garlic briefly until fragrant.
Add lemon juice and lemon zest to the skillet and simmer the sauce.
Stir in chopped parsley and red pepper flakes.
Return salmon to the pan and spoon sauce over the fillets.
