Description

This easy shrimp and rice recipe takes less than 30 minutes to cook and is delicious drizzled with garlic butter. Perfect for dinner tonight!


Ingredients

1 pound shrimp, peeled and deveined
2 cups cooked rice
4 tablespoons butter
4 garlic cloves, minced
1 teaspoon smoked paprika
1 teaspoon chili flakes
Salt, to taste
Black pepper, to taste
2 tablespoons lemon juice
2 tablespoons chopped parsley


Instructions

Pat the shrimp dry with paper towels and season with salt, pepper, smoked paprika, and chili flakes.

Heat a large skillet over medium-high heat and add 2 tablespoons of butter.

Add the shrimp to the pan and cook for 1-2 minutes per side until just cooked through. Remove and set aside.

Add the remaining butter and garlic to the pan and cook for 30 seconds until fragrant.

Add the cooked rice and toss to coat in the garlic butter.

Return the shrimp to the pan, add lemon juice and parsley, and toss everything together.

Serve immediately.

Notes

Substitution: For a dairy-free version, use coconut oil or vegan butter in place of regular butter.
