Description

Ingredients

3 lb chuck roast
2 tsp kosher salt
1 tsp black pepper
1 tbsp avocado oil
1 large yellow onion, sliced
4 cloves garlic, minced
2 cups beef broth
2 tbsp tomato paste
1 tbsp Worcestershire sauce
1 lb baby potatoes
4 large carrots, peeled and cut into chunks
2 sprigs fresh rosemary


Instructions

Preheat oven to 300°F.

Pat chuck roast dry and season all sides with kosher salt and black pepper.

Heat avocado oil in a large Dutch oven over medium-high heat.

Sear chuck roast on all sides until browned, about 2-3 minutes per side. Remove roast and set aside.

Add sliced onion to the pot and sauté until softened, about 3 minutes.

Add minced garlic and sauté for 1 minute.

Stir in beef broth, tomato paste, and Worcestershire sauce. Scrape up any browned bits from the bottom.

Return roast to the pot. Add baby potatoes, carrots, and rosemary around the roast.

Cover the Dutch oven and transfer to the preheated oven.

Bake for 3 hours, or until the roast is fork tender.

Remove from oven and let rest for 10 minutes before slicing and serving with vegetables and au jus.
