A delicious and nutritious breakfast cobbler made with sweet potatoes and cottage cheese, perfect for a healthy start to your day.
Ingredients
2 cups sweet potatoes, peeled and cubed
1 cup cottage cheese
1/2 cup rolled oats
1/4 cup honey or maple syrup
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
1/2 cup chopped nuts (optional)
1/2 cup milk (or dairy-free alternative)
Instructions
Preheat the oven to 350°F (175°C).
In a large pot, boil the sweet potatoes until tender, about 15 minutes. Drain and mash.
In a mixing bowl, combine the mashed sweet potatoes, cottage cheese, oats, honey or maple syrup, cinnamon, nutmeg, and salt.
If using, fold in the chopped nuts.
Pour the mixture into a greased baking dish.
Pour the milk over the top of the mixture.
Bake for 30-35 minutes or until the top is golden brown.
Let cool for a few minutes before serving.
