Ingredients
1.5 lbs skinless salmon, cubed
1 tbsp olive oil
1 tsp paprika
0.5 tsp black pepper
0.5 tsp garlic powder
0.75 tsp salt
2 tbsp Dijon mustard
2 tbsp honey
2 yellow potatoes, sliced in rounds
4–5 carrots, peeled and sliced
3 shallots, sliced into rounds
0.25 cup fresh parsley, chopped
2 tbsp mayonnaise
0.25 tsp apple cider vinegar
Instructions
Preheat your oven to 400°F (200°C).
Slice yellow potatoes into 1/2 inch rounds and cut the carrots into 2-inch diagonal sticks. Toss with olive oil, paprika, salt, and pepper.
Roast the seasoned veggies in the oven for 30 minutes, stirring halfway, then continue for another 10 minutes until fork-tender.
Marinate the salmon with olive oil, paprika, garlic powder, salt, pepper, Dijon mustard, and honey, ensuring all pieces are coated.
After 40 minutes of veggie roasting, layer the marinated salmon on top and sprinkle with chopped parsley.
Return to the oven and cook for an additional 10-12 minutes until the salmon is flaky. Broil for the last 2 minutes for a crisp topping.
Whisk together mayonnaise, Dijon mustard, honey, apple cider vinegar, and paprika for the sauce. Drizzle over the meal before serving.
